1 onion, roughly chopped
2 celery sticks, trimmed and roughly chopped
2 carrots, trimmed and roughly chopped
1 potato, peeled and roughly chopped
1 tbsp. olive oil, plus extra to drizzle
2 garlic cloves, crushed
2 x 400 g tins chopped tomatoes
1 tbsp. tomato purée
1 l (2¼ pint) vegetable or fish stock
50 g (2oz) spaghetti strands, broken into short pieces
300 g (11oz) skinned smoked fish, cut into pieces - we used haddock
125 g (4oz) savoy cabbage, shredded

Put the onion, celery, carrots, and potato into a food processor, and blitz until you have small pieces (alternatively finely chop by hand). Heat the oil in a large pan over medium heat, add the vegetables and garlic and cook until softened, about 5min.

Add the tinned tomatoes, tomato purée, stock and some seasoning and bring to the boil. Turn down the heat and summer for 10min before adding the spaghetti. Cook for a further 10min, adding the fish and cabbage to the pan for the final 5min of cooking time. Check the seasoning and serve drizzled with extra oil.
